Make two tray-baked Italian pizzas from scratch, and go home with the confidence to bake them again in your own kitchen
Bake your first loaves with Italian home baker, Pietro Pagani from The Alternative Table.
Pizza in teglia is the tray-baked pizza that Italian families make in their ordinary home ovens. In this three-hour workshop, you’ll make your own dough by hand, then stretch, top and bake two very different pizzas. No pizza oven, stone or special equipment, just a baking tray.
Using local stoneground flour from Nonington Farms in Kent, made using regenerative farming methods, you’ll prepare a classic margherita, and a second pizza topped with seasonal ingredients. Pietro will share fun ideas for topping pizzas using local produce and his personal favourites pairing ingredients you might not expect.
You’ll mix and fold your dough, and learn why a wetter dough gives a lighter, crispier base. While it proves, Pietro will demonstrate how to stretch the dough into the tray without knocking out the air. Then you’ll do it yourself - stretching, topping and baking both pizzas, and of course, sampling the freshly-baked pizza Pietro prepared earlier.
You’ll leave the workshop with two pizzas made with your own hands, printed recipes, and the know-how to make them again at home.
This workshop suits complete beginners, improvers, and anyone who loves the idea of homemade pizza minus the soggy bottom!

About Pietro Pagani
Pietro grew up on Lake Como in northern Italy, where every meal was made from scratch and nothing was wasted. He learned to cook alongside his parents and grandmother, and has spent the last twenty years teaching friends and colleagues informally before founding The Alternative Table, a cookery school based in Tunbridge Wells. Because his own baking started at home, in a domestic kitchen with a domestic oven, he teaches the way he learned: slowly, with stories, and with a lot of room for mistakes.
Allergen notice: this bread making workshop is taking place in our kitchen where a variety of foods containing allergens are prepared. Our kitchen is aware of the 14 major allergens (celery, cereals containing gluten (such as wheat, rye, barley, and oats), crustaceans (such as prawns, crabs and lobsters), eggs, fish, lupin, milk, molluscs (such as mussels and oysters), mustard, peanuts, sesame, soybeans, sulphur dioxide and sulphites (if the sulphur dioxide and sulphites are at a concentration of more than ten parts per million) and tree nuts (such as almonds, hazelnuts, walnuts, brazil nuts, cashews, pecans, pistachios and macadamia nuts)). We cannot guarantee the items produced will not contain these. Please contact before booking if you have any questions.
